Senior Sous Chef

Newlands, Cape Town

You are an experienced Senior Sous Chef, ready to support the kitchen's day-to-day operations by training and managing staff, overseeing culinary activities, and ensuring the consistent quality of dishes. You will support the sous-chef in supervising the kitchen team and ensuring food is prepared to high standards. This role involves both hands-on cooking and team support, helping maintain a clean, safe, and efficient kitchen.

Aside from the above, you will regularly check and maintain stock levels, ensuring items are used before their expiry dates and that storage conditions are optimal and place daily or weekly orders for necessary ingredients, adjusting quantities based on usage and waste patterns.

Monitoring food expenses to stay within budget, seeking cost-effective alternatives without compromising quality, and collaborating with the Head Chef to create new dishes, ensuring they are costed accurately and align with the restaurant's standards, will form part of your role.

You will provide guidance and training to kitchen staff on food preparation, safety protocols, and proper equipment use, and ensure adherence to health and safety regulations, maintaining cleanliness and proper food-handling practices in the kitchen.

Coordinating with kitchen staff to assess needs and usage rates and collaborating with chefs on seasonal menus by aligning ingredient availability and recommending substitutions based on market trends or supply challenges will be part of your duties.

To be successful, you have a recognised culinary qualification from a South African or international institution at NQF Level 4 - 5 or equivalent with a completed chef apprenticeship or formal practical culinary training. Along with this, you have a minimum of 2 - 3 years' experience in a similar role within a busy, high-volume, upmarket hospitality establishment.

Flexibility to work shifts and provide support across multiple kitchen sections as required by operational needs, proficiency in the use of kitchen equipment, systems, and technology and a satisfactory criminal record, subject to assessment of the nature, severity, relevance, and recency of any offence, will strengthen your application.

You bring your expertise to the table with a well-presented, professional approach and excellent spoken and written communication skills. Your strong culinary knowledge and ability to manage and delegate tasks simultaneously ensure smooth operations in a high-pressure environment.

You excel in food hygiene and safety, organise kitchen stations to maximise efficiency during peak hours, and demonstrate initiative in resolving issues such as ingredient shortages or equipment failures.

With your skills in planning, directing, and motivating a team, you foster co-operation, maintain a positive work environment, and deliver quality service while meeting tight deadlines and handling special requests with ease. Your feedback and leadership drive success.
