OUTPUTS :

• Prepare and serve a wide variety of beverages including classic and signature cocktails, mocktails and other drinks tailoring them to guests’ preference
• Ability to develop and experiment with new and original drink ideas is essential for creating unique customer experiences
• Develop, maintain and update an innovative and appealing drink menu using available ingredients is essential
• Engage with guests, provide recommendations, take orders and ensure they have a memorable and enjoyable experience
• Manage bar inventory maintaining stock levels and minimizing waste
• Maintain cleanliness and hygiene standards at the bar, comply with all health and safety regulations and adhere to responsible alcohol service practices
• Prepare fresh ingredients in advance, such as juices, homemade syrups, cordials, garnishes and infusions to ensure high-quality drinks
• Ensure consistency and high quality for all beverages served, paying close attention to presentation, glassware and garnishes
• Interact with guests to understand their preferences, make knowledgeable recommendations and provide exceptional customer service
• Keep the Dining Room and bar areas tidy at all times with particular emphasis on keeping tables tidy and arranged neatly
• Set up the Dining Room, Boma, Bush Dinner or Bush bars to company standard
• Ensure all bar operating equipment is always maintained in the best possible condition
• Ensure the back of the bar and storerooms are always kept clean and tidy
• Carry out room service as required ensuring high standards of presentation at all times as per agreed standard
• Ensure all bar set-ups are ready at least half an hour before service time and be present to greet guests on arrival
• Assist with stock taking every Month end
• Rotate stock from the storeroom and all bars
• Manage the recording of all inclusive, exclusive, staff sales, personal bars and game drive drinks
• Restock mini bars, lodge bars and game drive cooler boxes daily

SKILLS REQUIRED :

• Deep knowledge of spirits, liqueurs, wine, beer and their various ingredients is essential
• The ability to experiment and create new, innovative cocktail recipes is essential
• Strong customer service skills and a friendly engaging personality to interact with guests is essential
• The artistic skill of tossing bottles, performing dramatic pouring and interacting with the crowd for entertainment is advantageous
• Clear and effective communication skills to understand guest preferences and coordinate with the bar and butler team is essential
• A strong work ethic, ability to work in shifts, and the physical stamina to work standing for long periods
• Attention to detail: A meticulous approach is required for precise measurements, perfect garnishes and impeccable drink presentation.
• A genuine passion for hospitality and dedication to providing a memorable experience for every guest
• Staying up to date on industry trends, new products and innovative techniques

KNOWLEDGE REQUIRED :

• Must be fluent in English
• Good guest service knowledge
• Good cocktail and wine knowledge

PREVIOUS WORK EXPERIENCE REQUIRED :

• Experience in the service industry a must in a similar role with a minimum of 2 years of experience
• Valid South African drivers licence

The successful candidate must have attention to detail and a positive outlook while being responsible, flexible, accurate, excellent team player, creative, committed, hardworking and eager to learn.
