Our client is seeking a skilled and reliable Blockman to join their team. The Blockman is responsible for breaking down carcasses, cutting meat into standard cuts, trimming, deboning, and preparing meat products according to company standards and customer specifications. This position requires precision, attention to hygiene, and adherence to food safety regulations.
Key Responsibilities:

Break down whole carcasses (beef, lamb, pork, etc.) into primal and sub-primal cuts.

Perform deboning, trimming, and portioning of meat to specified sizes and weights.

Use knives, band saws, and other cutting tools in a safe and effective manner.

Maintain high standards of cleanliness and hygiene in the work area.

Ensure all cuts meet quality, weight, and presentation standards.

Follow proper storage procedures for raw and processed meat.

Assist in inventory control by reporting low stock or waste.

Package and label meat products as per company or regulatory requirements.

Adhere strictly to health and safety regulations, including the use of personal protective equipment (PPE).

Collaborate with other butchery staff and support team operations as needed.
Requirements:

Proven experience as a blockman or meat cutter in a butchery or meat processing environment.

Strong knowledge of meat cuts, deboning techniques, and portion control.

Skilled in the use of butchery tools and equipment (knives, saws, scales, etc.).

Physically fit and able to lift heavy meat portions and stand for extended periods.

Basic understanding of food safety standards (HACCP knowledge is a plus).

High attention to detail and commitment to quality.

Good communication and teamwork skills.

Willingness to work flexible hours, including weekends and holidays if required.
Working Conditions:

Work is performed in a cold storage or chilled environment.
