Job Description

The Food and Beverage Manager oversees all aspects of food and beverage operations within the establishment to ensure exceptional quality, service, and profitability. This role involves managing daily operations, leading the team, coordinating with suppliers, ensuring compliance with health and safety regulations, and delivering a memorable guest experience aligned with the organisation’s standards.

Key Duties and Responsibilities

  • Lead and manage the food and beverage team, providing clear direction, motivation and training to maintain high standards of service and efficiency.
  • Plan, organise and supervise all food and beverage activities, including restaurants, bars, banquets and room service operations.
  • Develop and implement menus in collaboration with culinary teams, ensuring variety, quality and cost-effectiveness.
  • Monitor stock levels and control inventory to reduce waste and optimise cost management.
  • Maintain compliance with local health, safety and hygiene regulations, conducting regular inspections and staff training.
  • Manage supplier relationships, negotiate contracts and ensure timely delivery of quality products.
  • Prepare and manage budgets, forecasts and financial reports to achieve revenue targets and control operational costs.
  • Ensure exceptional guest satisfaction by responding promptly to feedback and resolving any issues professionally.
  • Coordinate with other departments, such as housekeeping and front office, to support smooth operation and guest experience.
  • Implement and oversee promotional activities and special events related to food and beverage services.
  • Stay informed about industry trends and competitor activities to continuously improve service offerings.

Required Qualifications

  • Formal qualification in hospitality management, catering or a related discipline.
  • Certification in food safety and hygiene.

Education

A minimum of a National Diploma or Bachelor’s degree in Hospitality Management, Hotel and Catering Management, or a closely related field is required.

Experience

  • At least five years’ experience in food and beverage management within a hospitality environment, preferably within hotels or resorts.
  • Proven track record in managing multi-outlet food and beverage operations.
  • Experience working in East Africa or similar tourism markets is advantageous.

Knowledge and Skills

  • Strong leadership and people management skills.
  • Excellent communication and interpersonal skills.
  • Sound financial acumen including budgeting and cost control.
  • Thorough understanding of health and safety regulations and food hygiene standards.
  • Ability to work effectively under pressure and manage multiple priorities.
  • Competency in using hospitality management software and standard office applications.
  • Problem-solving and conflict resolution capabilities.
  • Fluency in English; knowledge of Swahili is beneficial but not essential.

Preferred Qualifications

  • Additional professional training or certifications in hospitality or management.
  • Experience in luxury or boutique hotel settings.
  • Knowledge of sustainable and eco-friendly food and beverage practises.

Working Conditions

The role is based in Zanzibar South and Central regions and requires full-time presence with flexibility to work evenings, weekends and public holidays as operational demands dictate. The position involves regular interaction with guests and suppliers, and occasional travel within the region. The working environment is dynamic and fast-paced, requiring resilience and adaptability to seasonal fluctuations in tourism.
