Morii Restaurant Outlet Manager, Newlands, Cape Town

As a Restaurant Outlet Manager, you will be responsible for co-managing a fine dining restaurant, ensuring exceptional, personalised service for all guests. Key duties include driving sales and managing costs to achieve profitability, contributing to menu planning and promotions, and maintaining high service standards.

Your responsibilities will include staff training on service, menu, and sales. You will lead the team to promote engagement and retention by managing recruitment, performance, and daily operations. This includes overseeing bookings, stock control, cleaning protocols, and service.

To be successful in this role, you will need a Matric Certificate and a qualification from a recognised South-African or international institution. A relevant degree and a genuine passion for food and beverages in a hospitality setting are essential. You will also need to have completed courses from the Cape Wine Academy (WSET level 2 or 3) and a Cocktail Bar course.

A background as a Sommelier or similar, with strong wine, spirit, and fine dining experience, is essential. Additionally, you must have a proven track record of leading large teams, at least 3 years' experience in a similar role in an up-market restaurant, and proficiency with technology like micros/speed point machines and MS 365.

You are flexible with your shifts and have your own transport. You need to maintain a professional appearance, possess excellent communication skills, and have extensive knowledge of food, beverages, and the local hospitality scene. Key responsibilities include leading a team, managing finances, and demonstrating strong sales skills, all while working independently.
