Our client,based in Zambia, is looking for a dynamic and creative Head Chef who will take full ownership of their kitchen operations. This is a 3-month fixed-term contract, ideal for someone passionate about delivering exceptional dining experiences in a bush setting. The successful candidate will lead the kitchen team in creating memorable dishes using locally sourced and seasonal ingredients, manage stock and procurement, and ensure the highest standards of hygiene and safety. 

Responsibilities:

  • Lead and inspire a small kitchen brigade, ensuring high morale and team development 

  • Design and execute seasonal menus tailored to guest preferences, dietary requirements, and locally available produce 

  • Oversee all food preparation and presentation, ensuring consistency and high quality 

  • Manage kitchen stock levels, ordering, supplier relationships, and cost control 

  • Ensure adherence to food safety, hygiene, and sanitation standards 

  • Train and mentor junior kitchen team members, focusing on skills transfer and development 

  • Collaborate with lodge management on guest feedback and continuous improvement of the culinary offering 

Skills: 

  • Ability to work independently and thrive in remote, off-grid environments 

  • Excellent organizational, stock management, and cost control skills 

  • Proven ability to train and mentor junior staff 

  • Flexible, creative, and resourceful in challenging conditions 

  • Strong communication and team collaboration skills 

  • Confident creating a variety of cuisines (e.g., contemporary African, fusion, international, plant-based options) 

  • Passionate about sustainability and eco-friendly practices 

  • Calm and solutions-focused under pressure 

Qualifications: 

  • Minimum 5 years’ experience as a Head Chef or senior kitchen leadership position 

  • Previous experience working in remote lodges, bush camps, or safari settings 

  • Strong knowledge of menu planning with an emphasis on seasonal, sustainable, and locally sourced ingredients 

  • Currently based in Africa or open to relocating on short notice
